What’s Bun cha Ha Noi ?
It is basically a Vietnamese rice noodle with pork. You’ll be served with a plate of rice noodles, fresh herbs, and a bowl of broth with grilled pork. The rice noodles and fresh herbs are pretty common in Ha Noi and Ho Chi Minh. The broth and the pork are the ones that make this dish unique.
The pork is served in the broth. Depending on where you eat, they will serve either grilled pork belly or grounded-grilled pork. In Bun cha restaurant which is everywhere in Hanoi and Ho Chi Minh , they have has a fireplace to cook the pork.
what’s the broth ?
In my country, like Thailand, we use fish sauce in almost every dish. We use it for cooking, for marinating , for sauce or to make amazing gravy. For this dish we use fish sauce to make the broth with rice vinegar, sugar ,chili pepper, garlic, and pickled papaya . It’s sweet and sour,and crispy due to the pickled papaya and also it has the unique taste of fish sauce.
How to eat
put vermicelli noodles, herbs, in a bow with broth, grill meat ball, pork belly all together. Dip everything together in the broth and enjoy!
